Too good NOT to share!

Well the title of this post says it all... today I plan to share a few items that I have found that are just TOO good NOT to share!!!

Starting of with this weekend!! Wow - I had an awesome weekend with my hubby!  We ventured out and found a really cool fishing lake where I proceeded to (yet once again) out fish him!!!! (Yes, yes I am a fishing star!!!)  Bahahaha!!!  But in all seriousness - we did end up catching a quite a few and it was a lot of fun!

Also this weekend I made PALEO Mayonnaise!! And it was GOOD!  I mean really really really good!!!!  So much so - I thought I would share the recipe with you here!!!

Ingredients -

  • 2 egg yolks
  • 1 tsp mustard
  • 3 tsp lemon juice
  • 1/2 cup LIGHT olive oil
  • 1/2 cup coconut oil (melted by just putting the jar in warm water!)
1.  Put the yolks in a bowl with the mustard and 1 tsp lemon juice and mix those ingredients together.  (I used the wire whisk attachment on my hand blender but you could use a regular whisk instead your hand will probably start to hurt by the end though!! LOL)


2.  Start whisking vigorously (I used the low setting on my hand blender) while dripping the oil very very very slowly, like drop by drop in the beginning. (I mixed both oils in one measuring cup before putting it in the bow.l) You’re creating an emulsion and if you put too much oil at once, it will separate!. Whisk non-stop!!!  (I put a towel under the bowl to help keep it from moving around.)

3.  As you add more oil, the emulsion will form and the mayonnaise will start to thicken and you can pour the oil a little faster at this point.

4.  When all the oil is incorporated and the mayonnaise is thick, add the rest of the lemon juice and then salt and pepper to season to taste!

I have to tell you it was soooo good!  And in my "eat what ever I wanted to" life I was really really really picky about mayo.  So much so I would ONLY eat Kraft Mayonnaise!!!  (So this is really saying a lot about the homemade version!!)

Now once I made my homemade mayo I used it to make some super yummy homemade Paleo Chicken Salad!!! (Which was a great Paleo item to throw in the cooler for picnic lunches on Saturday and Sunday at the lake!!)

The next thing on my too good not to share list is a book I just finished reading last night called "Come Back To Me", by Melissa Foster!

I read this on my Kindle (I still love love love my Kindle)...  it cost $3.99 or if you are a Prime Member you can get it for FREE!!!  It was an awesome book!!!  There were some twists and and turns at the end I never saw coming and yes, I have to admit it was a tear jerker! But I loved it!!!!  So if you are looking for a good read - I would recommend it HIGHLY!!!  (You can read all about it HERE)

Next on my list - a house cleaning device - the Swiffer Sweeper Vac!!!


Let me tell you - I LOVE this thing!!! I just got it over the weekend and I used it for the first time this morning! It is awesome!!!  Here in the house we are living in now the living room, dinning room, foyer, kitchen and two hallways are wood flooring... and man is it a pain to keep clean. Especially with my hubby and the two dog children!!!  It has been a constant battle.... 

I purchased a swiffer sweeper but it didn't pick up the larger bits and pieces of "stuff" (like grass) on the floor... but this sweeper vac did!!!!  Now in the reviews I read before most people said the battery didn't last long enough to do all their floors - I didn't have that problem.  The only thing that was a little concerning is it said you have to charge the battery (did I mention it is CORD FREE!!!) 12 to 18 hours the first time... mine actually took almost 24 hours to become completely charged! Other than that - this thing rocks!!! What the vac doesn't pick up the cloth does (and let me tell you the cloth was NASTY after cleaning my floors and I just mopped them last week!  In addition the vac cup is easy and fast to empty!)  This for sure is a too good not to share item in my book!!!!
