A week of Paleo...

As I stated yesterday we have decided to starting trying to eat Paleo....  So after lots of research and scouring paleo friendly cookbooks and websites this week's menu is as follows....

Monday - Spaghetti and meat sauce (but instead of spaghetti noodles I am using spaghetti squash).

Tuesday - Braised Beef Shank, Creamed Cauliflower and Lemon Green Beans

Wed - Split Chicken breast with baby broccoli and roasted turnips

Thursday - Ground pork in endive boats, squash latkis and roasted Brussels sprouts

Friday - Paleo fried chicken, fried okra and creamed spinach

Saturday - Beef stir fry with cauliflower rice

Sunday  - Crock pot lemon pepper Chicken with mixed veggies

Hmmm - doesn't sound too bad?!?!!
